El Taller del Xiquet Unveils A Fresh Spring Menu

Chef Danny Lledó’s Continues To Add Seasonal Spanish Delights

Washington, DC (April 28, 2025) El Taller del Xiquet introduces a series of new spring dishes, further pushing the boundaries of its dynamic, ever-evolving à la carte menu. The inspired Spanish workshop restaurant, led by award-winning Chef Danny Lledó, continues to redefine what modern Spanish cuisine can be, both creatively and seasonally.

One of the standout additions to the starters is Fonoll, a beautifully balanced dish featuring grilled fennel, fennel pollen and romesco. Another being Vera, a vibrant combination of pan-seared Maine scallop, sepia, coconut milk and sherry-cured salmon roe. Lastly, the Crú is a must-try featuring delicate hamachi crudo, vibrant citrus segments and a silky yellow pepper sauce.

Chef Lledó also proudly introduces a new main course, Lluç, a refined take on a coastal classic, pairing delicate Spanish hake with clams and a bright, herbaceous salsa verde. Rooted in the spirit of experimentation and culinary exploration, El Taller del Xiquet offers guests a chance to experience Spanish flavors through an innovative lens. The new menu items reflect Chef Lledó’s ongoing commitment to seasonality, technique and bold storytelling through food.

Chef Lledó is currently the most awarded paella chef in the country. This month he also introduces a Paella Agricola, a vegetarian dish with eggplant, artichoke, red pepper and flat beans. Having 11 honors to his name, including Best Paella at the Paella Wine & Beer Festival in L.A.; Best Valencian Paella at PaellaFest in DC; and People's Choice Paella at the Paella Wine & Beer Festival in Orange County, CA. He showcases his masterful technique internationally, and has received accolades at prestigious global competitions including the Paella Valenciana de Sueca International and Fideua de Gandia International.
