Chef Richard Sandoval’s new initiative celebrates the next generation of Latin chefs, creators, and restaurateurs with a cohort aimed at teaching culinary and entrepreneurial skills. What started as a Hispanic Heritage Month program has been extended due to its popularity of applicants. The cohort aims to spotlight the next generation of chefs and creators who use their platforms to authentically preserve their cultures through cuisine. The cohort offers access to tools, resources, and culminates in a workshop with Chef Sandoval at his restaurants to sharpen business and cooking skills from the chef with a footprint on four continents and 11 countries with 60+ locations. Savor Sips of dLeña’s Proprietary Tequila Bottles

dLeña has proudly joined forces with the renowned Herradura distillery to unveil the restaurant’s first-ever proprietary tequila bottles - an exclusive reposado tequila of unparalleled quality. The perfect gift for tequila aficionados this holiday season, enjoy bottles from American Oak bourbon barrels handpicked by the restaurant team on a trip to Mexico. Available for purchase onsite at dLeña only, the 750ml bottle sits at a premium price point of $450. Enjoy this Herradura double barrel reposado with a robust agave nectar and flavors of caramel, banana, and minimal peppercorn with a long and smooth finish. There are limited bottle quantities available. Guests are invited to sample the product before buying a bottle as shots are $28 on its own or to be made into a cocktail. Enjoy Bottomless Brunch on Black Friday, Christmas Eve, and New Year’s Day

dLeña will extend its bottomless brunch service for Black Friday (Friday, November 24), Christmas Eve (Sunday, December 24), and New Year’s Day (Monday, January 1). From 10am to 3pm, dLeña brunch guests will choose between ordering bottomless food and drinks ($65) or bottomless food ($40) and drinks a la carte. A la carte pricing is also available for food. Indulge in a Premium New Year’s Eve Dinner on December 31

On New Year’s Eve, Sunday, December 31, indulge in a celebratory five-course, prix fixe menu with offerings sure to please every palate. For $159 per person, with an optional $95 coursed beverage pairing, guests can enjoy an array of starters including empanadas de wagyu with beef tenderloin, truffle cheese, oyster sauce, almond guajillo chili, and chimichurri, and ostiones a la leña with grilled oysters, creamy crab, chipotle mignonette, and caviar, and a variety of salads, soups, and taco options. Choose from inviting main dishes like filet mignon a la leña with grilled broccolini, herb butter, and chimichurri, camarónes a la diabla jumbo prawns with smoked chili marinated, chipotle sauce, and grilled spring onion, and lamb shank birria style with salsa verde cruda, root vegetables, pickled red onion, and blue corn tortillas, among other choices straight from dLeña’s wood burning grill. End the meal with desserts like smoked chocolate fondant with crème fraîche ice cream, pink mole, and brittle seeds, and grilled jericalla cheesecake with hibiscus and amarena cherry, crispy tuile, sundried fig, and vanilla bean ice cream.
